Sab's, a traditional distillery in Beaune, at the heart of Burgundy's Grands Crus, perpetuates time-honoured expertise by promoting the local winegrowing heritage.
Our mobile still, the last of its kind in Burgundy, travels through the villages distilling the pomace and wine lees of nearly 300 partner winegrowers. This unique process enables us to capture the essence of the grapes and create spirits that are authentic, lively and deeply rooted in Burgundy tradition. We produce original eaux-de-vie - marc, fine, pear - as well as a collection of gins, combining respect for traditional methods with contemporary creativity.

Sab's is above all a personal adventure. After 20 years in the service of multinationals, including 12 years as an expatriate working for Pernod Ricard between Los Angeles and Casablanca, I felt the need to get back to basics: the land, the product and the craft. In 2018, my quest led me to this unique distillery in Burgundy. My aim: to bring back to life spirits that tell a story, the story of the land, the winegrowers and the passion that drives them. Each cuvée is carefully crafted, as a winegrower would his grapes, to reveal the full aromatic richness of the raw materials.

At Sab's, we like to share our expertise and take people behind the scenes of distillation. Understanding how grapes are transformed, unlocking the secrets of blending, then savouring the result during a tasting in our cellar: it's an immersion in the world of Burgundy spirits, marked by authenticity and conviviality. Our ambition is simple: to sublimate Burgundy's terroir through exceptional spirits that convey emotions and stories.
